Foodie Friday


One of my go-to light breakfasts:  one egg sunny side up on 1/2 of a spelt English muffin with almond butter.  Full of protein but it clocks in at less than 250 calories.  Perfect for a Friday morning when you know that you'll probably overindulge later in the day.



Chickpea, avocado, and feta salad.  The recipe serves 4 as a side dish, but I cut it in half and it was enough for a meal for one.

 
I've been trying to make one recipe a week from Giada's latest cookbook and this week the winner was Herbed Salmon Quinoa.
