One of my go-to light breakfasts: one egg sunny side up on 1/2 of a spelt English muffin with almond butter. Full of protein but it clocks in at less than 250 calories. Perfect for a Friday morning when you know that you'll probably overindulge later in the day.

recipe serves 4 as a side dish, but I cut it in half and it was enough for a meal for one.
